Date and walnut loaf

Date and Walnut Loaf 200gms self-raising flour 1 5ml spoon baking powder 50gms soft margarine 1 x 15ml spoon golden syrup 75gms dates chopped 75gms walnuts chopped 6 x 15ml spoons milk Grease and flour or line a 400gm loaf tin with greaseproof paper. Sieve the flour and baking powder into a bowl. Add all the remaining dry ingredients and mix well. Melt the margarine and golden syrup in a saucepan until dissolved and mix with the dry ingredients. Add the milk and mix well. The mixture will be quite dry. Turn into the loaf tin and, to ensure that the cake has a relatively flat top, hollow out the centre of the cake so the sides are higher than the centre. Bake in a moderate (190oC , 375oF, Gas mark 5) for 1 hour. This time may need to be less if using a fan assisted oven. Test with a knife to check it is cooked through. Knife should come out clean. Leave in tin for 5 mins then turn out and cool on a wire rack. Serve sliced and spread with butter. Back to Trip recipes
